a blender

Procedure

Proceed to hide Onion, Garlic, Cabbage, Mushrooms, and all other Children's Unmentionables in the sauce with great success by pulverizing them. Why didn't i think of this four years ago?

Sweet Roasted Pepper Salad

This has to be my favorite improvised salad so far.

You'll need:

a packet of small sweet peppers, or three bell peppers.
a red onion
a punnet of cherry tomatoes
a bunch of cilantro (coriander)
an avocado
salad leaves (i like spinach, and used a packet and a half. Maybe one would be enough.)
juice of half an orange
same amount of olive oil
salt and pepper to taste.
cheese to garnish if desired -- goat cheese, or i used smoked gouda this time which was tasty...

Procedure

Roast the peppers and onion at 350F for about half an hour. The onion could use a bit of butter. The peppers shouldn't need turning but might once.

Allow to cool wrapped in foil. If you used bell peppers, the skin should peel off nicely after cooling. If you used small sweet peppers you can leave the skin on and only discard the stalks.

Chop into bite-sized pieces.

Combine with chopped other ingredients. The cilantro doesn't have to be chopped finely, just enough to mix with the other ingredients.

Season with orange dressing and garnish with cheese.

There would be a picture but i ate it all :-P

Lemon Chicken

This is an old recipe from home. Not the fried up sort you get in Chinese restaurants.

You'll need:

chicken (thigh fillets work well)
1 tbsp flour
1 tbsp sweet paprika
salt and pepper
1/2 cup melted butter
1 tbsp soy sauce
1 tbsp oil
1 clove garlic, crushed
juice and grated rind of 1 lemon

Procedure

In large paper or plastic bag mix together flour, paprika, salt and pepper. Place chicken pieces in bag one at a time and shake to coat thoroughly.

Mix together lemon sauce: soy sauce, oil, garlic, and juice and rind of lemon.

Place the chicken pieces in a large frying pan or baking dish, and cover well with butter. Bake or fry until half cooked.

Add lemon sauce evenly over chicken and continue cooking 'til done.

Serve with rice.
